Chicken Breast Pizzaiola Style
Looking for an exciting new way to shake up your chicken breast dish? Well you got it!
Ingredients (for 4 people)
4 pieces of chicken breast (boneless, skinless)
250 gr of chopped tomatoes and basil
1 garlic clove
1 fresh mozzarella or another melting cheese like Fontina, Fontal Belga or Taleggio
4 table spoons of olive oil
salt
Cooking instructions
In a large saucepan, warm 3 tbsp of olive oil and cook the chicken breast for about 3 minutes over medium heat. Turn the breast over and cook in on the other side. Then, place 250 gr of chopped tomato and basil sauce, with some garlic in a pan, simmer for a few minutes and add the chicken breast. Cook for another 2 minutes.
In the meantime, cut the mozzarella (or other melting cheeses like Fontina, Fontal Belga or Taleggio) into thin slices and place them on each chicken breast slice. Cook it for another two minutes, until the mozzarella has melted. Serve it hot!
