If you love mushrooms and truffles, accompanied with some delicious Fontina cheese, then you will thoroughly enjoy this one! The filling, made of mascarpone cream with porcini mushroom and truffles, is then flavored with melted fontina cheese. Although finding fresh porcini mushrooms (or even truffles) is not an easy task, there are a number of available substitute products which can help you get the job done!
Ingredients
40 grams of butter
500 grams of milk
3 Eggs
Some salt and grounded pepper
250 grams of wheat flour
250 grams Mascarpone
1 Garlic clove
2 tablespoons of olive oil
400 grams of prepared porcini mushroom and truffle cream (or if available the equivalent of fresh porcini and black summer truffles)
100 grams of Fontina cheese
Let’s start the preparation of the mushroom and truffle cream which will serve to fill the crepes. Wash the mushrooms and cut into slices; in a pan, sauté the garlic with the olive oil and then add the mushrooms and leave to cook until they are softened. If using the ready-to-use porcini truffle and mushroom cream, add the olive oil and garlic to the pan. Mix with the porcini mushrooms and truffles. Let simmer for a few minutes.
Meanwhile, prepare the crepes by mixing the butter, milk, salt and flour. Prepare the crapes and set them aside.
Once the filling is prepared, mushrooms are cooked, place ¾ of the mixture into the food processor and prepare a cream. Set aside the remaining whole mushrooms. The porcini mushroom and truffle cream is ready to be used to fill your crapes!
In a frying pan add the cream of mushrooms with mascarpone dissolving it all with a few tablespoons of milk: add salt and pepper to your taste. Cook for a few minutes and when the cream is ready, fill the inside of the crepes.
Take the Fontina cheese, remove the rind and cut it into cubes or thin slices and add it to the crape filling. Complete the decoration by pouring a spoonful of cream on the surface of the crape, ad finish it with a few whole mushrooms/truffles we have set aside.
Before serving, please the crepes in the oven at 180 degrees for a few minutes. Serve them hot.
