Lasagna with Asparagus and Burrata Cheese

If you’re tired of the usual lasagna, this is definitely an unusual recipe prepared with asparagus and fresh burrata cheese. The taste is delicate. Sophisticated, yet simple. In other words… delicious and tasty. Lasagna with asparagus and burrata will satisfy even the most discerning palates.
250 gr of egg pasta, lasagna
500 gr of Burrata cheese
500 gr of asparagus
100 gr of Parmigiano Reggiano cheese
1 tablespoon of salt
1 pinch of black pepper
Clean the asparagus and cut into rounds, leaving the tips intact. Cook them in some salted water or vegetable broth.
Remove the inside of the creamy burrata cheese and place it into a blender along with 2/3 of the asparagus. Blend to obtain a smooth and homogeneous cream. Season with salt and pepper. Cut into strips the outer part of the burrata cheese. Set aside.
Start preparing lasagna. Butter a baking dish and put a sheet of lasagna pasta, fill with cream of asparagus and burrata. Then add a few strip of burrata, placing some round pieces of asparagus on top. Sprinkle with Parmigiano Reggiano cheese. Continue the layers the same way to finish up all the lasagna layers. Decorate the final layer with the asparagus tips.
Bake at 350 degrees F for about 30 minutes.
