Omelette with Truffles

Lets “truffle up” some of that omelette! Use this dish as a morning pick me up or even as an unconventional lunch or dinner at home with some friends. Whatever you choose as the circumstance, we’re sure this omelette will be one to remember. After all, it’s with truffles!

Ingredients (for 4 people)

2 teaspoon butter
3 eggs
2 tablespoons grated Grana Padano cheese
White (or Black) Truffle 
salt and pepper

Cooking instructions

In a small bowl, gently whisk the eggs. Add the Grana Padano cheese, salt and pepper. If cooking with black truffle slice thinly the truffles (or if using the dehydrated truffles, use already pre-sliced pieces), and add it to the mixture. If using white truffles, then keep the slices on the side until the end. In a medium pan, heat the butter over medium heat. Pour the egg mix into the hot sauté pan. Once the eggs are almost fully cooked, fold the omelette in half and cook 2 minutes longer until eggs are set. Serve immediately. Enjoy!
